I would like to buy a tripod for my new digital SLR camera. I do mostly pictures of people and closeups of nature. Should I get a taller, more stable tripod instead? How tall should the tripod be, considering the types of photos I like to take?

For portraits you'll want a conventional tripod - one that reaches to eye level. That is, your height minus about a foot. (A few inches for the ballhead, a few inches from the bottom of the camera to the viewfinder, and a few more inches because your eyes are not at the top of your head.) The less you have to extend the central column to reach this height, the better.
For closeups of nature, do you want to shoot near ground level? If so, look for a tripod that also offers a low minimum height. Or for a tripod where you can flip the central column upside down.
Then there's often the choice between 3 or 4 leg sections. A tripod where every leg has 3 telescopic sections is a bit more stable and faster to set up. A leg with 4 sections folds up smaller for travel. Your call.
Then there's the material. Aluminum is the cheapest. Basalt and carbon fiber are lighter, more stable (for the same volume), and much more expensive.
You even have the choice to purchase the legs and a ballhead/ pan tilt head separately to assemble your perfect setup. This is pretty much expected when you get into expensive brands but it's a hassle if you're just looking for something to start out with.
Bogen/ Manfrotto and SLIK have a wide variety of well made yet fairly inexpensive options. Plan to spend between $90 and $150 for a tripod that you'll want to keep for a few years. All of the cheap stuff tends to be too flimsy. As an indication of stability, try to get something that has a maximum load rating of 3x the heaviest combination you actually plan on using.
